Vegan "Cheese" Bread

"Pão de queijo", cheese bread or cheese roll is a typical Brazilian recipe and a very delicious snack! This is a twist on the traditional recipe, which was veganized 🌱

Ingredients:  

  • 1 1/2 cups tapioca flour
  • 150 g cooked sweet potato
  • 1 tablespoon flaked amaranto or quinoa
  • 1 tablespoon olive oil
  • 1/2 tablespoon salt

Instructions:

1 - Pre-heat the oven to 180º / 356° (Fahrenheit).

2 - Mix all the ingredients until they stick together in one mass.

3 - Shape into balls and bake for 20 minutes.

Banana Peel Pulled "Meat"
Instead of tossing banana peels, why not go zero waste and use them to cook an amazing & plant-based dish? 

To make this Banana Peel Pulled "Meat" you will need: 

  • 7 banana peels⁣
  • Juice of 1 lemon⁣
  • 1 chopped red onion⁣
  • 1 clove garlic, minced⁣
  • 1 bay leave⁣
  • 1 chopped red pepper⁣
  • 1 green pepper chopped⁣
  • 1 grated carrot⁣
  • 1 teaspoon ginger powder⁣
  • 1 teaspoon sweet paprika⁣
  • 1 teaspoon cumin⁣
  • 2 cups tomato paste⁣
  • 1 cup of water⁣
  • olive oil and salt⁣


Instructions:

1 - Scrape the white part from inside the banana, then cut into thin slices. Add the lemon juice and let rest while chopping the other ingredients.⁣

2 - In a pan, add the olive oil, onion, garlic, and bay leaf. Also the bell peppers, banana peels, and carrot.⁣

3 - Sauté for a few minutes, then add the seasonings. Add the tomato sauce and mix well.⁣

4 - Lower the heat and leave this tasty mix sitting for about 40 min on low heat for best results.⁣

Tips:⁣
- Letting garlic sit in water helps to peel them much easier.⁣
- The white parts of the banana are indigestible, take these parts out before cutting.⁣
- Banana peels can be stored for 1 week in the refrigerator, so you can store some and make this dish when you have enough.
